Vegetable frittata in the crockpot is something scrumptious you can cook on a weekend morning!

  • 1 1/2 C. zucchini, chopped
  • 3/4 C. green pepper, chopped
  • 1/2 C. cherry tomatoes, sliced
  • 1 lg. garlic clove, minced
  • 3 Tbs. vegetable oil
  • 6 eggs, beaten
  • 1 1/2 C. cheddar cheese, shredded
  • 1/4 C. half and half
  • 1 tsp. salt
  • 1/4 tsp. pepper

Heat zucchini, green pepper, mushrooms, tomatoes and garlic in oil until tender. Beat eggs and pour half in half in same bowl. Add cheddar cheese, salt and pepper. Mix well. Pour vegetables and then pour egg mixture over. Cook on high for 1 hour.
