Crockpot Veggie Spaghetti

Great meal for hungry kids who like veggies.

Ingredients

  • 1/2 spaghetti squash, steamed, removed from shell
  • 26 oz. meatless spaghetti sauce
  • 1/4 C. diced green pepper
  • 1/4 C. chopped onion
  • 1/4 C. fresh mushrooms, sliced
  • 1 zucchini, sliced

Directions

Combine all ingredients in crockpot. Cover and cook on low for 3-4 hours until zucchini is soft and everything is heated through. Sprinkle with parmesan cheese to serve.

  • Instead of crockpot , you could simmer the ingredients and pour over the cooked spaghetti squash.

  • We grew spaghetti squash one year and loved it. Slice it in half, take out all the seeds with a spoon, put it on a sprayed piece of foil cut side down and bake until a knife inserted finds it soft. It is so good and healthy. Going to plant some again this year and this recipe sounds so good.
