This white potato soup is made in a crockpot. Filled with Yukon potatoes and select spices this soup is a bowl of delicious flavor.

  • 6 C. chicken broth
  • 6 C. Yukon Gold potatoes, peeled and cubed
  • 1/2 tsp. seasoning salt
  • 1/4 tsp. white pepper
  • 1/4 tsp. ground red pepper
  • 1 (8 oz.) package cream cheese, cut into chunks, room temperature

Bake potatoes until done (about 45-60 minutes in a 400-degree oven). Then combine broth, potatoes and spices in a crockpot that is on high. Smash a few of the potatoes to release their starch for thickening. If you like it smooth smash more, if you like it chunky just smash a little of it. You can decide the texture of it. Add cream cheese. Heat, stirring frequently, until cheese melts. Cook in crockpot on high for 1 hour, then turn to low for 3-4 hours or more. Add parsley for garnish.
