Ingredients

  • 2 Eggs
  • 2/3 C. Vegetable Oil
  • 1 1/3 C. Zucchini, grated
  • 1 1/4 C. Sugar
  • 1 Tbs. Vanilla Extract
  • 2 C. Flour
  • 1/4 tsp. Salt
  • 1/2 tsp. Baking Powder
  • 1 Tbs. Cinnamon
  • 1/4 tsp. Ground Nutmeg

  1. Beat your eggs and add them into a mixing bowl along with the vegetable oil, sugar, zucchini and vanilla. Mix well.

  2. Add in your dry ingredients (flour, salt, baking powder, cinnamon and nutmeg) and stir well.

  3. Pour into a greased 2 quart mold (or whatever will fit in your crockpot) and place into the crockpot.

  4.  Bake on High for 3 hours or until done.
