We have another classic Mediterranean appetizer that all your friends and family will love. Place cottage cheese and tomatoes on your crostini for a great snack before dinner.

  • 2 Tbs. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 garlic clove, minced
  • 2 Tbs. basil, chopped
  • 8 slices sourdough
  • 1 1/2 C. cottage cheese
  • 3 tomatoes, chopped

Mix oil, seasoning, garlic and basil in a bowl and marinate for 15 to 30 minutes. Toast bread on a broiler until golden and crisp. Place the cottage cheese in bowl. Whisk in oil and seasoning. Squeeze in juice and set aside. Spoon cottage cheese and tomatoes on spoon.
