Crow's Nest Pudding

In this recipe, the pudding rests on a small cookie for perfect serving sizes.

Ingredients

  • 1 C. granulated sugar
  • 1 egg
  • 1 tsp. baking powder
  • 1/2 C. milk
  • 1 tsp. vanilla extract
  • Butter, the size of a walnut
  • Flour, as needed
  • Chocolate Pudding Filling:
  • 1 1/2 C. milk
  • 1 1/2 C. water
  • 1/2 C. granulated sugar
  • 2 Tbs. cornstarch
  • 1 Tbs. all-purpose flour
  • 2 Tbs. cocoa powder
  • 1 tsp. vanilla extract

Directions

Cream the butter and egg; add the sugar and baking powder; mix well; add the milk and vanilla extract; mix well. Add enough flour to make a little stiffer than cake batter and bake in 9x13-inch pan at 375 degrees for 20-30 minutes. When cool cut in little squares and top with filling.

For Chocolate Pudding Filling: Mix sugar, flour, cornstarch and cocoa, add to milk and water and bring to boil, add vanilla. Put this on the squares and serve while hot.
