Crumb Coffee Cake

Ingredients
- Batter:
- 2 C. firmly packed brown sugar
- 2 C. all purpose flour
- 3/4 C. butter or margarine
- 1 tsp. cinnamon
- 1 egg
- 2 tsp. vanilla extract
- 1 C. hot coffee
- 1 tsp. baking soda
- Icing:
- 1 C. confectioners' sugar
- 1 Tbs. water
- 1/2 tsp. vanilla extract
Directions
Mix brown sugar, flour, margarine and cinnamon together until lumpy. Set aside 1 C. of this mixture. Mix egg, vanilla, and soda (which has been dissolved in hot coffee); add to remaining dry mixture. Pour into a 8 or 9 inch baking pan which has been greased and floured. Sprinkle with the 1 C. dry mixture. Bake for 30-40 minutes in a 350 degree oven. Drizzle with icing while still warm.
To make icing, blend above ingredients until smooth in small mixing bowl.
