Crumb-Crusted Dijon Sirloin
Ingredients
- 2 lb. boneless beef top sirloin steak, cut 1-1/2 inches thick
- 1 tsp. olive oil
- 2 Tbs. Dijon-style mustard
- 1 clove garlic, crushed
- 1/4 tsp. pepper
- 1/2 C. soft bread crumbs
- 1/4 C. chopped fresh parsley
Directions
In a large nonstick skillet, heat 1 tsp. oil over medium-high heat until hot. Add steak to skillet; brown on both sides. Place steak on rack in shallow roasting pan. In a small bowl, combine mustard, 1 clove garlic and 1/4 tsp. pepper; spread on top of steak. In another bowl, toss bread crumbs with 1/4 C. parsley; pat evenly over mustard mixture. Place steak in a 350 degree oven. Bake 35-40 minutes for medium rare to medium doneness, or to your taste. Transfer steak to carving board. Let stand 5 minutes. Carve steak. Makes 6 servings.
