Crumbled Banana Cream Cake Parfait

Ingredients
- 1/2 C. shortening
- 1 1/2 C. granulated sugar
- 2 eggs
- 1 C. overripe bananas, mashed
- 3 Tbs. milk
- 1 Tbs. vinegar
- 1/2 tsp. baking powder
- 2 C. flour
- 1 tsp. baking soda
- 1/2 C. chopped nuts
- Banana cream:
- 4 C. whipped cream
- 4 bananas, mashed

Directions
Preheat your oven at 375 degrees F. In a bowl, mix shortening and sugar. Beat in eggs, one at a time. Add bananas with milk and vinegar. Fold in baking powder, flour and soda. Combine well. Evenly pour in two 8-inch round baking pans. Bake for 20 to 25 minutes. Remove from oven and cool on rack. Place cake in bowl and crumble.
For cream, mix whipped cream and bananas. Layer cream, cake and more cream on top in each parfait glass. Feel free to add any toppings.
