This delicious cake is fresh and delicious! It has just the right amount of crunch and is so simple to make. All you have to do is dump the ingredients into the pan and the let the oven do all the work.

Ingredients

  • Filling
  • 1 1.2 C. rhubarb, cut into ½ in. cubes
  • 1 qt. Strawberries, de-stemmed and halved
  • ½ C. granulated sugar
  • 1 lemon, juiced
  • 4 Tbs. cornstarch
  • Salt, pinch
  • Topping
  • 2 C. all-purpose flour
  • 4 Tbs. granulated sugar
  • 5 Tbs. raw sugar
  • 1 ½ sticks of butter, melted
  • 1 ½ lemons, zested
  • 1 ½ tsp. Baking powder

Directions

Preheat the oven to 375 degrees. Combine all of the topping ingredients in a large bowl and refrigerate. Toss all of the filling ingredients together and place them in a greased dish. Cover the filling with the topping and bake the cake for about 40 to 50 minutes.
