This healthy pie recipe makes for both a delicious breakfast, and refreshing desert item. The combination of walnuts and apple will please friends and family all throughout the year!

  • 4 apples peeled and thinly sliced
  • 1 tsp lemon juice
  • 1/2 C sugar 
  • 1/4 C packed brown sugar
  • 2 Tbs quick-cooking tapioca
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Pastry for single-crust pie
  • 2 tsp butter
  • 1 C chopped walnuts

Toss apple slices with lemon juice in large bowl. Combine sugar, tapioca, cinnamon and nutmeg with apples and toss together. Let stand for 15 minutes.

Line a large pie plate with crust. Add apple mixture: sprinkle butter flakes over top using cheese grater. Sprinkle walnuts over top, sealing apple mix in.

Bake at 400° for 40-45 minutes or until filling is bubbly. Cool on a wire rack, then serve.
