This nutty parfait is perfect for a post-dinner or midday snack. The walnut mixture is spicy and crunchy underneath the sweet raspberry and apple sauces. It has bright undertones from the lemon that goes great with the fruit.

  • 12 oz. raspberries (+ more for garnish)
  • ½ C. sugar
  • 2 Tbs. cornstarch
  • 1 tsp. lemon juice
  • 1 C. walnuts, chopped
  • 2 Tbs. butter, melted
  • 1 tsp. ground cinnamon
  • 1 C. sweetened applesauce

Strain the raspberries of their juice (should be ¾ cup, add water if not). Pour the raspberry juice, sugar, lemon juice, and cornstarch. Bring it to a rolling boil and stir until it thickens. Mix the walnuts, butter, and cinnamon. Pour the walnut mixture into the bottom of the jars. Pour a layer of the applesauce on top and then the raspberry puree. Add more of the granola mixture on top and top with fresh raspberry.
