Lettuce wraps are becoming quite popular whether they are for a main meal or an appetizer. Here is a way to make tasty turkey lettuce wraps from your own kitchen instead of waiting for an order at P.F. Changs.

  • 10 oz. ground turkey
  • 2 Tbs. fresh cilantro
  • 4 Tbs. freshly squeezed lime juice
  • 1 head of iceberg lettuce
  • 2 Tbs. fresh breadcrumbs
  • 2 green spring onions
  • 1/8 tsp. cayenne pepper
  • 1 purple onion, chopped
  • 15 mini Portobello mushrooms, chopped

Chop the cilantro to make 2 Tbs. and set rest aside. Put the ground turkey in a pan with 2 Tbs. of the lime juice and enough lightly- salted cold water to cover the turkey. Break the meat while bringing it to a boil and simmer for 2 minutes. Remove and drain liquids. Once meat is drained, put it in a bowl. For the purple onion and mushroom, chop and put into a pan with a little olive oil. Cook until vegetables are tender and place in bowl with turkey. Add the chopped cilantro, green onion. Breadcrumbs, remaining lime juice, and cayenne pepper to taste. Mix all together. Serve by scooping filling into lettuce and with a side of soy sauce.
