Ingredients

  • 2 T. extra virgin olive oil
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 1/2 C. broccoli florets
  • 1 C. spinach, chopped
  • 1 C. ricotta
  • 1 C. mozzarella
  • 2 T. Parmesan
  • Salt and pepper
  • 1 lbs. store-bought pizza dough
  • 1 large egg

Begin by preheating the oven to 450 degrees F. Warm oil in a skillet over medium heat and add onions, garlic, spinach, and broccoli. Cook for about 5 minutes then remove from skillet. In a bowl, combine ricotta, mozzarella and Parmesan; season with salt and pepper and stir in broccoli mixture. Then roll out dough and place the mixture in the center of the pastry and then fold dough over to enclose filling. Transfer calzones to baking sheet. Cut 3 small vents in each calzone and bake for 15 minutes.
