Light, super simple, and delicious dessert. Great with vanilla ice cream.

Ingredients

  • 1 C. all-purpose flour
  • 1 C. white sugar
  • 1/4 tsp. salt
  • 2 C. cranberries
  • 1/2 C. chopped walnuts
  • 1/2 C. butter, melted
  • 2 eggs
  • 1 tsp. almond extract

Directions

Preheat oven to 350 degrees. Grease one 9-inch pie pan. Combine the flour, sugar, and salt. Stir in the cranberries and the walnuts, and toss to coat. Stir in the butter, beaten eggs, and almond extract. If you are using frozen cranberries, the mixture will be very thick. Spread the batter into the prepared pan. Bake at 350 degrees for 40 minutes, or until a wooden pick inserted near the center comes out clean. Serve warm with whipped cream or ice cream.

  • This recipe is beyond awesome. I use a different method and people go nuts over these flavors. I mix the sugar and flour, then pour over the cranberries and nuts. Beat the two eggs, stir in flavoring and butter. Pour mixture into an oblong pan and bake until lightly brown.. Cool on rack for ten minutes, remove from pan and cool. Cut into bars... Spread bars on parchment paper on a cookie sheet.......bake another 8 to 10 minutes. These are among my favorite eats.
