Crustless Zucchini Pie

This is a wonderful meatless and crust-free side dish to serve at a family gathering.

Ingredients

  • 1 large onion chopped
  • 1/2 C. vegetable oil
  • 1/2 C. grated parmesan cheese
  • 4 beaten eggs
  • 1 Tbs. parsley
  • 3 C. grated zucchini
  • 1 C. Bisquick
  • 1 C. shredded cheddar cheese

Directions

Combine first 5 ingredients. Stir in zucchini, Bisquick and cheese Pour into 2 greased 9 inch pie plates Bake on 350 degrees for 35 minutes or until golden brown.
