Crusty Potatoes

Ingredients
- 1 1/4 lbs. potatoes
- 1/4 C. olive oil
- salt
- pepper
Directions
Scrub potatoes under cold water. Peel them and cut them into 1-inch pieces. Pour oil into a 9-inch skillet. Place the pan over medium-high heat until oil is hot and piece of potato sizzles when added. Dry potatoes with paper towels. Add potatoes to the hot oil and let cook for 2 minutes. Turn potatoes and cook for 2 more minutes. Keep cooking and turn them every 2 minutes until they browned on all sides, about 10 minutes. Add salt and pepper to taste. Cover pan and cook, turning occasionally, until potatoes are tender, 5 minutes. Serve immediately.
