Cube Steak in Tomato Sauce

This cube steak in tomato sauce recipe is a great way to serve steak to your family and make the home budget stretch.

  • 2 lb. cube steaks
  • 2 potatoes, peeled and cubed
  • 2 cloves garlic
  • 1 15-oz. can tomato sauce
  • 1 C. water
  • 10 pitted green olives (optional)
  • salt and pepper to taste
  • olive or vegetable oil, to coat bottom of frying pan
  • white rice (optional)

Coat bottom of a 12-inch frying pan with oil. Saute chopped garlic over low heat. Add cubed steaks to the pan, increase the heat to medium. Brown steak cubes on one side, turn and brown on the other side. Peel and cube potatoes. Add tomato sauce, then one cup of water, olives and the potato cubes to the pan. Let simmer over medium heat for approximately 35-40 minutes. Salt and pepper to taste. Sauce should thicken up to be a gravy consistency and the potatoes should be cooked through. Serve with white rice.
