Cucumber Bacon Bites
Serving Size / Yield
- 2 Large Cucumbers, Halved and Insides Scooped out
- 1 Cup Chopped Red pepper
- 1 Cup Chopped Yellow Pepper
- 1 Cup Chopped Tomato
- 1/2 Cup Rice, Cooked
- Bacon, Cooked and in Pieces
- 1 tbs olive oil
In a skillet, put in 1 tbs of olive oil on medium heat.
Add in peppers and tomatoes and saute until grill marks start to appear, for about 3-5 minutes.
Add in cooked rice and bacon and stir.
Put heat at a simmer and continue blending everything is heated through.
Place hollow cucumber halves on a plate.
Fill with the mixture.
Season with salt and pepper if needed.
