Cucumber Dip

Ingredients
- 1 med. unpared cucumber
- 1 C. cottage cheese, drained
- 2 Tbs. finely chopped onion
- 2-4 tablespoons jalapeno relish
- one 4 1/2-oz. can shrimp, drained and chopped
Directions
Cut cucumber in half lengthwise; remove seeds and discard. Shred enough cucumber to make 1 cup. Drain. In a small mixer bowl, combine shredded cucumber, drained cottage cheese, and onion. Beat until nearly smooth. Blend in relish; stir in shrimp. Chill before serving. Garnish with additional shrimp, if desired. Seve with crackers.
