Cucumber Pickles

My neighbor made these and shared some with us. I had to have the recipe, they are delicious when served on the side with burgers, steaks or chops. These get better as they age.

  • 6 C. cucumbers, peeled and sliced thin
  • 1 C. onion, sliced thin
  • 1 C. green pepper, sliced thin
  • 2 C. sugar (or substitute)
  • 1 C. white vinegar
  • 1 Tbs. salt

Peel and thinly slice cucumbers, onions and bell peppers. Set aside in a large bowl.

In a medium saucepan, heat sugar, vinegar and salt until sugar is dissolved. Pour over vegetables and cool. Cover and refrigerate.
