Cucumber Salad

This is too easy and good not to make! This recipe can also be made with Splenda as a substitution for sugar.

Ingredients

  • 2 cucumbers
  • 2 tomatoes
  • 1 med. onion (sweet is better)
  • 1/4 C. vinegar
  • 1 C. sugar

Directions

Peel skin from cucumbers if desired and seed them. Chop tomatoes in large chunks. Chop onion in rings and quarter. In a large bowl, add sugar and vinegar. Whisk until sugar is dissolved. Add the cucumbers, tomatoes and onions to the sugar and vinegar mixture. Better if served right away.
