Cucumber Sauce

This is a fabulous sauce with poached salmon or other fish and not as creamy as tartar sauce!

Ingredients

  • 1 small cucumber
  • 1/2 C. plain low-fat yogurt
  • 1 Tbs. grated onion
  • 1 Tbs. fresh lemon juice
  • 1 tsp. prepared yellow mustard
  • 1 tsp. snipped fresh dill or 1/2 tsp. dried dill weed
  • 1/4 tsp. salt
  • Pinch of white pepper

Directions

Peel the cucumber, slice lengthwise, and scoop out the seeds. Shred or coarsely grate the cucumber. Put the shredded cucumber in a strainer and press out as much liquid as possible. Combine all the other ingredients in a small bowl; mix well. Add the cucumber and stir to mix. Cover and chill at least 1 hour for the flavors to blend.

Yield: 1 cup (8 servings)
