Curried Chicken Pita Pockets
Ingredients
- 3 C. cooked chicken, cubed
- 1/2 C. Thai yellow curry sauce
- 1/4 C. mango ginger chutney
- 1 C. grapes, halved
- 1/2 C. cashews
- 1 scallion, chopped
- 8 lettuce leaves
- 4 pita pockets
Directions
Mix curry and chutney until well-blended. Add chicken and toss to coat, then stir in grapes, cashews, and scallions. Cut pitas in half and stuff each half with chicken salad mixture and a lettuce leaf. Serve.
