  • 3 C. cooked chicken, cubed
  • 1/2 C. Thai yellow curry sauce
  • 1/4 C. mango ginger chutney
  • 1 C. grapes, halved
  • 1/2 C. cashews
  • 1 scallion, chopped
  • 8 lettuce leaves
  • 4 pita pockets

Mix curry and chutney until well-blended.  Add chicken and toss to coat, then stir in grapes, cashews, and scallions.  Cut pitas in half and stuff each half with chicken salad mixture and a lettuce leaf.  Serve.
