Curried Macaroni

Ingredients
- 2 Tbs. oil
- 1 onion, chopped
- 1 Tbs. curry powder
- 1/4 C. flour
- 2 C. water
- 1 chicken bouillon cube
- 1 Tbs. tomato paste
- salt
- pepper
- 2 tomatoes, chopped
- 1 red apple, cored and sliced
- 1 chicken leg and thigh, cooked and meat coarsely chopped
- 3 Tbs. mango chutney
- 2 C. long macaroni
- 1/4 C. peanuts
Directions
Heat the oil in a saucepan and sauté the onion until soft. Add the curry powder and cook for 1 minute. Then add the flour and cook for another minute. Add the water, stirring constantly, and crumble in the bouillon cube. Add the tomato paste and bring to a boil. Season to taste and add the chopped tomatoes, apple, chicken and mango chutney. Simmer for 45 minutes. Meanwhile, cook the macaroni in a pan of boiling, salted water for 15 minutes, then drain and arrange in a serving dish. Add the peanuts to the curry and simmer for another 5 minutes. Pour the curry sauce onto the macaroni.
