  • ¼ teaspoon salt
  • 1 ¼ cups mashed cooked potato
  • ¼ cup cooked yellow lentils
  • 1 tablespoon minced mint
  • 1 teaspoon curry powder
  • 1 teaspoon butter
  • ¼ teaspoon ground cumin
  • 10 egg roll wrappers
  • 1 egg
  • ½ cup green peas

Combine the potatoes, lentils, curry powder, 1 teaspoon butter, cumin, mint, and salt. Fold in peas. Cut down the middle of 1 egg roll wrapper to form 2 rectangles. Dampen the edges of the wrapper with lightly beaten egg. Spoon 1 tablespoon of the potato mixture into the bottom edge of the wrapper. Fold up the wrapper to make a triangle and fold the corner to the opposite side. Repeat this process with each wrapper and the remaining filling. Heat a large pan over medium heat and coat the pan with cooking spray before adding the samosas to the pan. Cook for 1 minute on each side and drain on paper towels.
