Curried Potatoes in Oyster Sauce

These curried potatoes in oyster sauce are very original. This is a favorite recipe of my friend from Malaysia except she substitutes oil for margarine.

Ingredients

  • 3-4 med. or lg. Irish potatoes
  • 4 oz. (1 stick) margarine or butter (may substitute half or all with canola or olive oil)
  • 1/4 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. black pepper
  • 1/3 tsp. ground coriander seed (cumin)
  • 3/4 tsp. curry powder (Indian or French)
  • 2 Tbs. Chinese oyster sauce
  • 1 dash red pepper (optional)

Directions

Peel and cut potatoes into 1-inch cubes. Place potatoes in a baking dish and add salt, pepper, garlic powder, ground coriander and curry powder. Add red pepper if desired. Melt margarine and pour over potatoes stirring until seasoning and margarine are well mixed with potatoes. Bake in oven at 375 degrees, stirring occasionally for approximately 30 minutes. Add oyster sauce and bake for another 15 minutes or until browned.
