Curried Ravioli with Spinach

Ingredients
- 1 9-oz. pkg. refrigerated cheese-filled ravioli
- 1 9-0z. box frozen spinach
- 2 oz. cream cheese, softened
- 2/3 C. canned coconut milk
- 1/3 C. vegetable broth
- 3/4 tsp. curry powder
- 1/4 tsp. salt
- 3 med. green onions, sliced (1/3 C.)
- 1/4 C. chopped peanuts
Directions
Cook and drain ravioli as direct on package. Cook and drain spinach as directed on box. In 1-quart saucepan, mix cream cheese, coconut milk, broth, curry powder and salt. Cook over medium heat, stirring occasionally, until hot. Spoon spinach onto serving plate. Top with ravioli and sauce. Sprinkle with onions and peanuts.
