Curried Turkey Salad

The curry in this salad gives it just the right exotic flair.

Ingredients

  • 1 1/4 C. plain yogurt
  • 1 Tbs. curry powder
  • 4 C. cooked leftover turkey, cut into 1" chunks
  • 1/3 C. scallions, finely chopped
  • 2 C. red grapes, seedless, halved
  • 3/4 C. slivered almonds, toasted

Directions

In a large bowl, combine the yogurt and curry powder. Add the turkey, scallions, grapes and almonds. Toss together to coat. Serve chilled.

Yield: 4-6 Servings
