  • 1 (8-oz.) pkg. yellow rice
  • 4 Tbs. olive oil
  • 1 yellow sweet onion, chopped
  • 5 stalks celery, chopped
  • 1 bunch scallions, chopped
  • 1 red bell pepper, chopped
  • 1/4 C. butter
  • 1/2 tsp. curry powder

Follow package directions to cook yellow rice. Stir fry the vegetables in butter on a skillet over medium heat until vegetables are tender. Remove from heat. Add curry powder and stir well. In a bowl, mix rice and vegetables. Serve.
