Dad's Macaroni and Tomatoes

It's a savory and wonderful tasting side dish suitable for any occasion: cook outs, get togethers, and so on. It's red and just a great tasting dish. Can be cut down about half for a smaller amount.

  • 1 1 lb. box elbow macaroni
  • 1 lb. bacon
  • 1 can tomato paste or 1-2 oz. homemade
  • 2-3 cans diced tomatoes or 2 qt. homemade
  • 1 can tomato juice or 1 1/2 qt. homemade
  • 1 medium onion
  • 2 or 3 Tbs. garlic powder or to taste
  • 2 or 3 Tbs. onion powder or to taste
  • 1-2 Tbs minced garlic or to taste
  • 1 C. water, give or take
  • salt and pepper to taste

Cook the macaroni al dente. Rinse in cold water and set aside. In a large stew pot, fry bacon until it's crisp and drain at least half of bacon grease. Leaving the bacon in pot, break it up some. Dice or ruff cut onion and add to pot. Add the remaining ingredients except the macaroni, adding the cup of water last. The water is so the sauce doesn't get too thick. You may not need the full cup. Let ingredients cook unil onions are just starting to get translucent. Add the macaroni until reheated. Add salt and pepper to taste.
