Dad's Pork Burritos
- 3-5 lb. pork roast
- 1 white onion
- 1 clove garlic
- 1 16-oz. can whole tomatoes
- 8 hot chili peppers
- 1 Tbs. taco seasoning per pound of meat
- flour tortillas
Bake pork roast for 1 1/2 hours until tender and let cool. Cut up into chunks and place in a dutch oven.
In blender, put 1/4 white onion, 1 clove of garlic, juice from the canned tomatoes, 8 hot chili peppers (more or less to your liking). Puree then add the whole tomatoes and blend for 10 seconds.
Add 1 Tbs. taco seasoning per pound of meat on top of the meat in dutch oven and pour sauce mixture over that and mix well. Let simmer for 2 hours until tender and sauce has absorbed into meat.
Put into flour tortilla and garnish with your favorites: tomatoes, lettuce, cheese, etc.
