  • 2/3 C. Milk Chocolate Morsels
  • 2/3 C. Semi-Sweet Chocolate Morsels
  • 14 oz. Low-Fat Cream Cheese
  • 2 Tbs. Skim Milk
  • 6 Large Egg Whites
  • 4 Tbs. Sugar-Free Sweetener
  • 1/2 tsp. Pure Mint Extract
  • 2 C. Low-Fat Granola

Place the milk chocolate in a microwaveable bowl and warm it up on high heat 1 1/2 to 2 minutes until melted, stirring every 30 seconds. Repeat the process for the semi-sweet chocolate. In a medium-sized mixing bowl, beat together the low-fat cream cheese and skim milk until fully incorporated. Set aside and hold at room temperature. With a mixer, whip egg whites until soft peaks form. Gradually add the sweetener and continue whipping until firm. Using a whisk, fold half of the egg whites into the melted milk chocolate, and half into the melted semi-sweet chocolate. When the whites are almost completely incorporated, fold half of the cream cheese mixture and the mint extract into the milk chocolate, and the other half of the cream cheese mixture into the semi-sweet chocolate. Cover both mousses and refrigerate for approximately 1 hour or until set. Alternate layering milk chocolate-mint mousse and dark chocolate mousse into 4 glasses, sprinkling granola between each layer.
