  • 1 cup almond flour
  • 6 tbsp. cacao powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 cup raw dark coconut sugar
  • 1/2 cup mini chocolate chips
  • 1/4 cup Greek yogurt, room temperature
  • 3/4 cup water
  • 1/4 cup almond butter, room temperature
  • 2 tsp. pure vanilla extract
  • Cherry sauce
  • 2 cups cherries, pitted
  • 2 tbsp. unsalted butter
  • 2 tbsp. sugar
  • 2 tbsp. water
  • 2 tsp. cornstarch

Preheat the oven to 350 degrees. Spray an 8 inch round pan with non-stick cooking spray. In a large bowl, sift flour, cacao powder, baking soda, salt, chocolate chips, and coconut sugar. In another large bowl, whisk almond butter, yogurt, water and vanilla together. Gently fold in the flour mixture into the wet mixture, don't over stir. Transfer batter into pan and bake for 25 minutes until toothpick inserted into center comes out clean. Allow the cake to cool. While the cake cools, start on the cherry sauce by heating cherries in a medium saucepan or medium heat. Add water, butter, sugar and cornstarch. Bring the mixture to a boil. Reduce the heat and simmer for 2-3 minutes until sauce thickens. Drizzle this sauce over the cake and enjoy warm.
