  • 3 sticks butter, divided
  • 4 oz. dark chocolate, chopped
  • 1 C. cocoa powder
  • 1 ½ C. flour
  • 1 ½ tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 4 eggs
  • 3 tsp. vanilla extract, divided
  • 1 ½ C. sugar
  • 1 C. sour cream
  • ½ C. solid vegetable shortening
  • 3 T. milk
  • 4 C. powdered sugar
  • Blue food coloring

Preheat oven to 350 degrees. In a saucepan over low heat, melt and whisk together 2 sticks of butter, chocolate, and cocoa powder until smooth; set aside to cool. In a bowl, combine flour, baking powder, baking soda, and salt; set aside. In a separate large bowl, whisk together eggs, 2 teaspoons of vanilla, and sugar until combined. Add in melted chocolate mixture, then gradually mix in dry ingredients. Stir in sour cream and pour batter evenly into cupcake liners. Bake for 18 to 20 minutes until an inserted toothpick comes out clean; set aside to cool. In a large bowl, use an electric mixer to beat remaining butter and shortening until pale and fluffy. Mix in milk and remaining vanilla. Gradually add in powdered sugar and beat until fluffy. Fold in food coloring and frost cooled cupcakes!
