Dark Chocolate Mint Brownies

Ingredients
- 1 ¼ C. all-purpose flour
- ¾ tsp. baking powder
- ¼ C. unsweetened cocoa powder
- Dash salt
- 1 stick butter
- 8 oz. dark chocolate, chopped
- 1 C. sugar
- 3 eggs
- 1 tsp. peppermint extract

Grease your crockpot with cooking spray and line it with parchment paper. In a saucepan, melt butter and chocolate over low heat while stirring constantly. Remove from heat and add in sugar. Whisk in eggs until well combined. In a small bowl, combine flour, cocoa powder, baking powder, and salt. Add this mixture into your batter and stir until smooth. Stir in peppermint extract and pour batter into your crockpot. Cook on low for 3 to 4 hours, taking the lid off for the final 30 minutes. Remove from crockpot and let cool completely.
