Special Mother's Day Entry My mother is my favorite friend, she has helped me thru a lot of hard times. We have been thru thick and thin. She was raised in a Canadian orphanage when her mother was unable to support the family when her dad walked out. Later when her mom could afford it, they were brought home. She married a man in the military and traveled the world with him and was a shadow of support for the both of us. I now take care of her since my dad passed away and she is fighting for her memory, not of the past but the future. My favorite recipe that she made was a great smelling Date bread that fell out of the loaf pan and was sooooooooooo good with the butter on it, while hot. I can smell the coffee on her hands in the morning when she would wake me up for school after my dad had left for his military duties. We sat and ate the Date bread together with milk and coffee. It was great.

Ingredients

  • 1 C. chopped Dates Dromeday
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 C. shortening Crisco
  • 3/4 C. boiling water
  • 2 eggs
  • 1/2 tsp. vanilla
  • 1 C. sugar
  • 1 1/2 C. All Purpose sifted Flour

Directions

Combine dates, soda, and salt in a mixing bowl. Add shortening and boiling water, and allow this mixture to stand for 15 minutes. Stir to blend. Beat the eggs slightly and add the vanilla. Stir in the sugar and the sifted flour. Add to Date mixture. Do not over mix. Place in a loaf pan. Bake one hour at 350 degrees F. It will be done when tooth pick inserted comes out clean. Loosen sides with Spatula. Cool before removing from loaf pan. Cut into 12 inch slices and put real butter on the bread. Have some cold milk or a hot tea or hot coffee, mmmmmmmmm good.
