Date Nut Muffins

Simple yet nutritious muffins perfect for breakfast on the go.

Ingredients

  • 1 C. whole wheat flour
  • 1 C. white flour
  • 2 tsp. baking powder
  • 1 tsp. Cinnamon
  • 1 1/2 Tbs. Oil
  • 1/2 C. chopped dates
  • 1/2 C. chopped walnuts
  • 1 egg, beaten
  • 2 Tbs. liquid sweetener
  • 1 C. milk

Directions

Preheat oven to 400 degrees. Mix dry ingredients. Add dates and walnuts. Make a hole in the mixture and add milk, egg, sweetener, and oil. Mix until blended. Spray muffin tin with cooking spray and fill two thirds full. Bake for 20-25 minutes.

Yield: 12 large muffins
