Dawn's Minestrone Soup
Ingredients
- pepperoni slices (to taste)
- 5 slices bacon
- 2 beef bouillon cubes
- 2 14-oz. cans whole tomatoes, broken up
- 2 cloves garlic, chopped
- cheese tortellini, macaroni or ditalini, cooked (to taste)
- 2 bags frozen Italian veggies
- 1 tsp. basil
- salt and pepper to taste
Directions
Fry bacon until crisp. remove and set aside. Add pepperoni and cook in the bacon drippings until soft. Add garlic , then cook until oil turns red. Add tomatoes, 2 cans of water, bouillon, crumbled bacon, 2 bags of veggies, basil, salt and pepper. Cook for 20 minutes. Add pasta just before serving.
