Decadent Fish Salad
Ingredients
- 1 lb. frozen or fresh cod
- 1/2 green pepper, chopped
- 1/2 red pepper, chopped
- 1 stalk celery, chopped
- 1 clove garlic, finely chopped
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. oregano
- 1/2 C. olive oil
- 1/4 C. wine vinegar
- 1/2 head leaf lettuce
Directions
Poach cod in 1/4 cup water until cooked. Drain. Remove to plate and cool. Mix all other ingredients with fish except lettuce together in another bowl. Divide lettuce evenly between individual plates and top with the fish salad.
