  • 8 granny smith apples
  • 8 6-inch candy sticks
  • 1/3 C. dark corn syrup
  • 1/3 C. sugar
  • 1/3 C. dark brown sugar
  • 1/3 C. heavy cream
  • 1/4 tsp. salt
  • 3 T. butter
  • 3/4 tsp. vanilla extract
  • 1 C. roasted peanuts, coarsely chopped
  • 1/2 C. white chocolate chips
  • 1/2 C. semi-sweet chocolate chips

Line a baking sheet with parchment paper. Remove the stems from your apples and replace with candy sticks. In a medium saucepan, combine corn syrup, both sugars, cream, salt, and 2/3-cup water. Stirring constantly, bring mixture to a boil. Continue boiling and stirring until it reaches 240°F. Remove from heat and whisk in butter and vanilla. Working quickly, dip each apple in caramel. Transfer to the prepared baking sheet and refrigerate for 10 minutes. Add each variety of chocolate chips into two separate microwavable bowls. Microwave in 30-second increments until just melted and stir well. Remove apples from your fridge and drizzle with both melted chocolates and sprinkle with nuts. Serve immediately or return to refrigerator until ready to serve.
