  • 2 over ripe bananas
  • 2 tsp rice flour
  • 2 tsp brown sugar
  • ½ tsp vanilla extract
  • 2 Tbs all purpose flour
  • ½ tsp baking power
  • Salt
  • Oil

Prepare a tray lined with paper towels.

In a bowl, mash the bananas and then combine it with the rice flour, brown sugar, vanilla extract, all-purpose flour, baking powder and a pinch of salt.

Once the batter is formed, prepare a pot for deep frying.

Once the oil is hot enough, begin shaping round balls from the batter and carefully lowering it into the hot oil.

Flip it around to ensure even frying. Deep fry for about 1-2 minutes until the outside has browned. Remove and lay it on the paper towels.

Repeat until the batter is done.

Plate and serve warm.
