  • 1 qt. peanut oil
  • 1 C. fine cornmeal
  • 1 C. all-purpose flour
  • 1 tsp. seafood seasoning
  • 1/2 tsp. kosher salt
  • 1/4 tsp. hot smoked paprika
  • 1/4 tsp. freshly ground black pepper
  • 6 8 oz. catfish fillets, rinsed and patted dry
  • ¾ C. low-fat buttermilk

In a 5-quart Dutch oven, heat peanut oil over high heat. Whisk together flour and cornmeal in a shallow dish. In a small bowl, combine the seafood seasoning, salt, paprika, and pepper. Season each catfish fillet evenly on both sides with spices. Pour buttermilk into another shallow dish. Dip each fillet into the buttermilk, then coat in cornmeal mixture and let sit for five minutes. Add two fillets to the hot oil and fry until golden brown. Remove and transfer to a cooking rack set over a paper towel-lined baking sheet. Repeat with remaining fillets and serve immediately.
