  • 1 C. grated parmesan
  • 1 C. all-purpose flour
  • ½ tsp. dried parsley
  • ¼ tsp. chili powder
  • Salt and pepper
  • 2 Tbs. mayo
  • 1 egg, beat
  • 1 lb. white fish
  • Vegetable oil for frying

Combine the parmesan, flour, and spices in a bowl. In another bowl, whisk the egg and mayonnaise. Slice the fish into long pieces. Dip the fish in the egg then the flour mixture. Heat oil in a skillet on high. Fry each piece of fish for 3-5 minutes on each side. Drain the fish on a paper towel. Serve with a cool dill or tartar sauce.
