  • 1 large onion, cut into 1/4 –inch slices
  • 1 1/4 C. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 egg
  • 1 C. milk
  • 3/4 C. dry breadcrumbs
  • 1 qt. oil for frying

In a large skillet or deep fryer, heat oil to 365°F. In a medium bowl, whisk together flour, baking powder and salt. Dip the onion rings in flour mixture and set aside. Add egg and milk into flour mixture and mix well. In a shallow baking dish, add the breadcrumbs. Dip the rings in batter and transfer to breadcrumbs. Coat evenly. Place rings in oil and fry until golden brown. Transfer to paper towel and drain grease.
