  • 1 refrigerated pie crust
  • 2 C. milk, divided
  • 3 large egg yolks
  • 1/2 tsp. vanilla extract
  • 3/4 C. granulated sugar
  • 2 Tbs. all-purpose flour
  • 2 Tbs. cornstarch
  • 1 tsp. salt
  • 1/4 tsp. nutmeg
  • 2 Tbs. unsalted butter
  • 3 Tbs. light rum, divided
  • 1 C. heavy cream
  • 2 Tbs. sugar
  • 3 1/2 ripe bananas, sliced
  • 1 can whipped cream
  • Chocolate shavings to garnish

Preheat oven to 400 degrees. Roll out pie crust on a lightly floured surface and shape to pie pan. Bake for 20-25 minutes or until edges are golden brown. Meanwhile, mix 1/4 C. milk, egg yolks and vanilla in a mixing bowl. In a small saucepan, add granulated sugar, flour, cornstarch, salt, nutmeg and remaining milk. Bring to a simmer, whisking constantly. Add butter and stir for 2-3 minutes over medium heat until thick.

Remove from heat and whisk half of the egg mixture in and return to stove and cook over medium heat. Strain and add 2 Tbs. rum. Refrigerate for 20 minutes. In a small mixing bowl, beat cream with sugar and 1 Tbs. rum. Arrange banana slices on top of cooked pie crust and pour custard on top. Top with whipped cream completely covering pie and sprinkle with chocolate shavings. Refrigerate for at least 3 hours.
