  • 1 white onion, diced
  • 3 garlic cloves, minced
  • 3 T. butter
  • ¼ C. flour
  • 2/3 C. carrots, diced
  • 2 C. milk
  • 3 C. chicken stock
  • 4 C. broccoli florets
  • 1 tsp. Dijon mustard
  • 1 tsp. salt
  • 1 tsp. pepper
  • 8 oz. cheddar cheese, shredded

In a large pot begin to add in the diced white onion, minced garlic cloves and butter. Let the white onion and garlic simmer. Add in the diced carrots, milk and flour. Mix well. Pour in the chicken stock. Add in the broccoli florets, Dijon mustard, salt and pepper. Stir constantly. Once it starts to thicken add in the cheddar cheese, a little at a time. It’s done once the soup thickens and when the broccoli is no longer tender. Enjoy in a bread bowl.
