  • 1 C. hazelnuts
  • ½ C. butter, softened
  • ½ C. light brown sugar
  • 1 tsp. vanilla
  • 1 C. flour
  • 1 egg
  • 4 oz. chocolate, chopped
  • Espresso sea salt
  • ½ C. almonds

Preheat the oven to 350 degrees. Pulse the hazelnuts in a food processor until they are pea-sized. In a bowl mix the hazelnuts, butter, salt, vanilla and egg. Scoop the dough with a spoon onto a parchment covered baking sheet. Gently press each one down. Bake them for 12-15 minutes. Meanwhile melt the chocolate and butter in a saucepan. Sprinkle in a pinch of the espresso sea salt. Drizzle the chocolate mixture over the cookies. Sprinkle almonds over the top. Let them cool and refrigerate. Serve and enjoy.
