  • Wooden or bamboo skewers
  • 1 – 1 ¼ lb. boneless lambs
  • 2 T. olive oil
  • 1 T. freshly squeezed lemon juice
  • 2 garlic cloves, chopped
  • ½ tsp. ground cumin
  • ½ tsp. ground coriander
  • Salt
  • Pepper
  • 1 red pepper
  • 1 yellow pepper
  • 1 sweet onion
  • ½ lb. golden potatoes
  • ½ tsp salt

Soak the skewers in water. In a small dish, whisk together olive oil, lemon juice, garlic, cumin, and coriander. Add in the lamb cubes and toss to coat evenly, cover and set aside for 10 minutes. Place the lamb and chopped vegetables on the skewers. Place a rack about 4 in. from broil and preheat. Place skewers in and broil for 3-4 minutes on one side and flip and repeat on the other side. For the potatoes, in a large saucepan, place the potatoes, whole into it. Add enough cold water to cover tops of potatoes. Add in salt, cover, and cook on a high heat for 20-25 minute or until potatoes are tender. Place potatoes and lamb kabobs on a plate and serve. If a little flavor for potatoes, melt some butter in a small saucepan and drizzle over potatoes.
