  • 1 1/2 oz. chocolate, coarsely chopped, divided
  • 1/8 C. heavy cream
  • 1 1/2 T. packed light brown sugar
  • 1 T. vegetable oil
  • 1 egg, cracked, beat it, use only 1 T.
  • 1/4 tsp. vanilla extract
  • 3 T. all-purpose flour
  • 1/8 tsp. baking powder
  • 1 pinch baking soda
  • powdered sugar

Take out 1 6-oz. ramekin and spray it using nonstick cooking spray. Use parchment paper to line a large baking sheet and set it aside. Preheat your oven to 350 degrees F. Take out a medium microwavable bowl and mix together 1 ounce of chocolate and heavy cream. Microwave the ingredients for around 20-25 seconds, or until the ingredients are melted. Remove, stir the mixture. Microwave for 5 additional seconds if it needs to be further melted. When finished, whisk in the brown sugar until thoroughly combined. Whisk in the oil, egg, and vanilla until thoroughly blended and set aside.

Take out a small bowl and whisk together the flour, baking powder, and baking soda. Transfer the flour mixture into the chocolate mixture. Use a rubber spatula to fold the ingredients together and evenly transfer the cake mixture into the prepared ramekin until it is 3/4 full. Add the remaining ounce of chocolate into the cake mixture and make sure it is fully submerged. Bake the cake in your preheated oven for around 15 minutes. Remember to rotate the cake around 8 minutes into cooking. Top with powdered sugar and serve.
